The Perfect Pea Soup

This wonderfully bright green soup is humble & wholesome with a hint of sassy. It reminds me of really happy days in a student collective in Malmö, where many hours were spent cooking & chatting in the tiniest baby blue kitchen overlooking Södra Försdadsgatan. I was always amazed by how my flatmate Agnes could so effortlessly tweak the flavours & make everything taste so good (the pea soup being a perfect example). The memory of the soup followed me to Oslo & led to many iterations trying to recreate it. I have now landed my own version that´s pretty close to how I remember it. It´s my go-to recipe when i need a quick & tasty pick-me-up on a rainy day (or any day really).

3-4 tsp olive oil

3-4 tsp fresh ginger (minced)

0,5 red chili (chopped)

Lime zest (of 0,5 lime)

2 packs frozen peas (700g)

0,5 l vegetable stock

1 can coconut milk

Salt to taste

Juice of 1 lime

Fresh koriander

Microgreens (optional for serving)

Fresh bread (for serving)

Gjør følgende

Fry ginger, chili, lime peel & some fresh koriander stalks in olive oil. Add frozen peas. Mix until the peas have soaked in all the flavours. Add stock & coconut milk. Boil until peas are soft (but not too mushy!).


Remove from heat & let it cool a bit. Then blend with a hand blender until the soup is nice & creamy. Season with salt, lime juice & more lime zest or chili if needed.


Serve with fresh koriander &/or microgreens & enjoy it with some fresh bread.


Ekstra info

Everything can be tweaked according to taste. You can use more ginger or chili or extra lime juice in the end.
