Tahchin is one of the popular Persian cuisines and it’s made differently from region to region. Basically Tahchin is a rice based cuisine that is stuffed with other ingredients such as meat, chicken or vegetables like potato, red beats, onion, barberry, eggplant and so on. As a child Tahchin was my absolute favourite meal and I’ve always standing in the kitchen observing my mom making it. I just loved to see the process and sometimes I was helping my mom to chop or frye and so on. Tahchin is still one my favourite food today. Here I’m presenting my recipe for the base of this food.

2 cups of rice

1/2 ts saffron (boiled in haf a cup water and let it cool down)

1 egg

2-4 s yogurt

First boil the rice until they are soft but

not too soft. Add the salt while is boiling. Then remove the water. Put the rice in a bowl and add all other ingredients. Mix all together. In a pot (teflon pot) add 2 spoons of oil one spoon water and one spoon yogurt, mix and spread it all over the pot. Add the rice mixture and let it cook for 20-30 minutes. Enjoy your Tahchin!

This can be served with all sort of stews

or barbecue chicken.
