It was back when I was living in Budapest that a friend of mine introduced me to this marvelous dish called shakshuka. It's warm, easy to make -- you can throw many vegetables and spices in a pan, add your water and eggs, and voilà. I see this dish as liberal and flexible -- each shakshuka you make can be different according to what ingredients you have at home, just follow your gut and work around what you have in your fridge!
As I recently moved to Oslo, I found myself making shaksuka more often than not. Behold one of my most recent shaksuka invention, made at 8am on a hungover monday morning for my friend sleeping on the couch and my flatmate who happened to be hanging out in the kitchen as well <3 it was a happy breakfast

(in order of apparition in the pan)
butter
1 leek
1 red bell pepper
bunch of mushrooms
black pepper
turmeric
coriander
cumin
chili
feta cheese
garlic
soy sauce
4 eggs
(optional) fresh coriander
bread
You may completely change some ingredients if you want, as long as some eggs, spices and vegetables are present!

- Cut up your veggies
- Put some butter in your pan and put the leek in the pan first (high heat). Let it cook and melt a bit
- Then add the (finely) cut red pepper and shrooms in the pan. Don't hesitate to add a bit more butter if you feel it's not greasy enough:)
IMPORTANT: after veggies are in the pan and started to cook, add water into the pan from time to time. The juicy mixture should fill up like half the pan -- keep in mind you will poach the eggs in the sauce at the end!
- add as many spices as you want
- chop up and add feta cheese when veggies are well cooked
- add garlic (near the end is important so flavor stays strong!)
- add soy sauce
- crack your eggs into the mixture -- don't mix them! allow the eggs to simmer into the sauce (low-medium heat) until the whites are cooked:)
Wait for heat to go down a bit, serve your friends, and dip your bread into the sauce:)
Ekstra info
This shaksuka finds itself to be pretty far away from traditional mediteranean/middle eastern shaksuka but tbh leek+mushroom+feta go real well together!!
